An Egg-Allergic's Alternative to Eggs

Filed in archive Food Allergies , Gadgets and Tools Against Allergies , Living with Allergies on November 2, 2006

eggs are almost always called for in baking recipes. Sometimes, there are even ready mixes you can buy for waffles, brownies, and muffins and all you have to do is add the eggs. But what if you're allergic to eggs?

WLKY food editor J. Scott Wilson offers these alternatives to eggs, depending on what you'll be needing them for:
  • 1 packet of plain gelatin mixed with 2 tablespoons of warm water (Don't mix the gelatin with water until you are ready to use it, or it will set.)

  • 1 teaspoon of Baking powder, 1 tablespoon of water, and 1 tablespoon of vinegar

  • 1 teaspoon of yeast dissolved in ¼ cup of warm water

  • 1 tablespoon of apricot puree

  • 1 ½ tablespoons of water, 1 ½ tablespoons of oil, and 1 teaspoon of baking powder

Also mentioned is a so-called Egg Replacer, a popular egg substitute among vegetarians. It's basically made of different sorts of flour, so if you have wheat or gluten allergies, pick one that's gluten-free as well.
