It's autumn and time for apple-picking! What do you do with your bushels and bushels of apples? Apple pies, apple pies and more apple pies!
Unfortunately, for those with food allergies, particularly to wheat, egg and milk, it's hard to substitute the ingredients with allergy-safe ones and still come up with a pie that's as good as the "real" one. But, if there's a will (or if there's no choice), there's a way and Janeen of Our Story found it!
That apple pie you see on the photo is totally allergen-free. No wheat flour, no eggs, no milk, no butter, no nuts. The crust calls for:

- 1/2 cup buckwheat flour
- 1/2 cup sorghum flour
- 1 cup white rice flour
- 1 tsp. of xanthan gum
- 2/3 cup canola oil
- 1/4 tsp. cinnamon
- 1 tbs. sugar
- 7 tbs. cold water (add another tbs. one at a time if necessary)
And here's what you'll need for the filling and crumble on top:
- 6-7 Macintosh apples, peeled, cored, and sliced thin
- 1/4 cup of lemon juice
- 3 tbs. corn starch
- 1/3 cup white rice flour
- 1 tbs. cinnamon
- 1/2 cup of sugar (or to taste if you like it more or less sweet)
- 4 tbs. dairy free margarine, softened

Thanks for the link Ruth. I hope if anyone else tries it they like it. We finished it last night and it was still good on the 3rd day :)

That pie looks absolutely delicious! I wonder if you could sub more rice flour for the sorghum?
